I tried this out now, and first of all, the touchscreen controls disappear if you don't touch the screen for about 2 seconds.
However when you start up the app it turns off the Dualshock. If you turn on the dual shock again, you'll see the login screen and it asks you to select a user profile.
If I chose the same one I'm logged into the game with, the app will disconnect from the game. If I chose a different user profile, the game continues. However, pressing buttons on the controller does not cause anything to happen in the game. Though if I hold the Home button on the controller, it brings up the Home quick menu, and then I can see myself using the controller to browse the menus on my phone, while also seeing Persona 5.

So it looks like they've deliberately disabled you from using the Dualshock to play for some reason, even though it clearly works. Not sure why or if there's an option to change to a controller.
I'll look into it later.

That's probably Apple saying our controllers only, damn.
