Mariokart & Animal Crossing. I know you cannot technically finish these games, but-
After I play all the tracks in Mariokart I always want more. Although I have to say Mario Kart 8 is amazing (my favourite Mariokart) because of how many tracks & diverse they are. Plus with the never-ending online matches it has the best replay-ability (along-side Smash Bros & Splatoon 2) which is super addictive. So I don't mind completing Mariokart 8, its just all the other previous Mariokart games that always made me feel like I wanted more after I completed them.
Also, when you pay off your debt to Tom Nook and get the largest house I feel like a multimillionaire that has it all and I cannot work towards anything anymore.
