I stumbled upon a hidden gem called Kingdom Two Crowns recently. It has split screen co-op, and is basically a medieval side-scrolling city-building game. You control the "Monarch", and you ride around on a horse recruiting peasants and collecting money, and you build up your empire. At night, enemies called "Greed" spawn and try and attack your base. What's interesting is that you cannot attack the Greed, but you can drop money on the ground and they will accept it and run off with it.
There is a season cycle as well, going through Spring, Summer, Fall, Winter, each with their own wildlife and quirks. It's fairly cheap, and co-op is a blast. If you end up getting this game, I recommend going in blind. There are a lot of game mechanics that are purposefully vague, and much of the fun is in finding out what everything does.
Other recommendations would be Super Mario Party, Overcooked 2, and Snipperclips.
