Fact is... On the GPU side of the equation, you do not need twice the GPU performance to match a PS4.

If you opened up the videos and went directly to the Youtube source... They say the games are using PS4 equivalent settings.

And yeah I know that's not the price Sony and Microsoft would pay for them, just pointing out that high-end hardware is both thermally and financially out of reach for consoles.

The 7nm gains are actually bigger than that... However because 7nm is so young, they need to be conservative to keep yields in check.
A 7nm chip released in a couple of years time though should have reductions in power+increases in performance with a possible increase to density... Just like what happened with 14nm.

And AMD would have had a working successor to Navi available for some time.

I think the XB1X is a bad console. For anybody buying one I'd urge them to just spend a couple hundred more for a Ryzen 5 2600X/580 build.  But I have to admit that a PC with a 2600X/580 in it for $500 or less would take some serious corner cutting. 

It's not a bad buy per-say. It's just not hitting the heights you would expect from a graphics standpoint.
Partly that is due to the fact we are held back by the base Xbox One and Playstation 4... So developers build games for those systems, then just tack on expensive rendering techniques to push the Xbox One X/Playstation 4 Pro. - But the bulk of horsepower is usually dumped into resolution and framerate anyway.
