Perhaps a stupid suggestion, but have you checked if the projector is set to RGB full or limited mode? Mine is default in RGB limited to be compatible with rec.709 content. PS3 and 360 use RGB full or wide in video games which will look washed out on a RGB limited display.
I bought a little 'toy' projector a few years ago, AAXA LED pocket projector.

It's a fun little thing, good for old consoles although you need separate sound. The room must still be dark and the image gets pretty dull over 50". My wife used it for painting, project a picture onto canvas and trace it with pencil to paint the rest in later. It's battery operated so very portable. It doesn't compare to the real thing though, just a fun toy.
