That said, as well as going for a bigger SSD as Zkuq said, you should double your amount of RAM. 1 stick of 8GB won't be enough, get a second one or a 2x8GB kit. And since you're planning to go with an AMD CPU, the faster the memory, the better it will perform. A 3000 or 3200MHz kit should be your goal.

I just did an update. Taking out the 2TB HDD for now, and just going with a 500 GB SSD. All the games I plan on installing, OS, and other software takes up less than half that space. I'll add the 2TB HDD later. 

Yeah, I'm sure in two or three years 8 GB of RAM will be a joke. I was already planning on getting 1 stick of 8GB, and then adding another 8GB stick later on. I had no clue that there were faster ram sticks out there. Changed the RAM stick to the only DDR4 at 3000 MHz speed. 

AMD designed its cores with an interconnection mesh called Infinity Fabric, that works at the same speed than your system's RAM. So, the faster your memory is, the faster the cores talk to each other, improving performance.

Also, one of the games you've listed already lists 16GB of RAM in the recommended specs, BattleTech. So you should really consider getting 16GB from the start.
