The fact that Overwatch hasn't come to Switch yet is downright bizarre, it makes perfect sense.

They didn't really hype it, they just casually mentioned in an interview about Wolfenstein II that they had another Switch port to announce soon. It's not like they were teasing it as some mind-blowing revelation, "you won't believe what we're working on next", etc.

Their approach seems to depend on the game; with Doom and Wolfenstein they seemed to place priority on maintaining the game's graphical aesthetic as much as possible while taking a hit in resolution and framerate, while in Rocket League they cut back effects in order to hit 60fps.

Higher resolution is way more demanding then cutting down some effects, that's the reason they drop resolution so much on the  other 2 games. while rocket league was probably not holding a rocket solid 60fps, so cutting down some effects made sense, as it was really close to reaching it's target anyway.
