I mean, this has nothing to do with the cloud, most likely they are simply logging the time between game restarts and adapt to it with "ageing"....

Don't you see? With the power of the cloud, all of the characters are living full lives inside the game like Tron! This is why you can NOT play Sea of Thieves. These characters will all perish if you're not playing ALL THE TIME! Rare has created life!
