For me personally I'd count both the year and the platform a game came out. Using your own example with Owlboy, the game came out in 2016 on PC, but I haven't played it and if I were to play it for the first time on Switch then I'd count it as a 2018 game to me since that's when the game released on the platform I played. Same thing if Crash Bandicoot were to be ported to other consoles since I don't own a PS4, it'd be essentially a new game to me. Of course, if I played Owlboy this year on PC instead, it'd have to belong in my 2016 list (If I had one).

As for episodic games it just makes sense to use the release date of the final episode, since that's when the game was technically completed.

Edit: I hope my english is understandable enough, it's late where I live and I'm sleepy so I could have made some mistakes or explained things poorly =P

You bring up a very good point I didn't think of.  Gave me something to think about. And you sleep typing seems perfect to me. I think yours is better written than mine and Im wide awake. lol
