In my Intel Build I will certainly pick a dedicated GPU. I'm not a big fan of port extension cards blocking PCIE ports in general. If I need it I think I got a SATA extension lying around somewhere which I could use just for migration. But I could just do the migration over LAN to spare me the hassle. Not gonna make a difference if the transport takes 2 or 3 days.

Right now I'm looking for digital PSUs, but apparently nothing has been done in that field for the past 2 years. At least not in low power PSUs. So I'm kinda miffed at that.

Oh, you are only putting four HDDs in the system.

If all you are doing is moving the data, then yeah: go over ethernet.
It would probably only take about 2 - 2.5 hours to transfer a TB that way.
