How do the visuals on the Nintendo Switch compare to those of the Xbox 360 & PS3?

The magical unlimited meme power of the cell cannot do that. The CPU of the WiiU has the same if not more capable CPU, and a much much better GPU. More ram also. You would be talking about a totally different architecture and engine that would otherwise make the PS3 explode. I'm really not going to argue the facts here, the PS3 simply couldn't.

Ram is the only thing that could be a stumbling block for BOTW on PS3, no the WiiU does not have a "much much better GPU", it is an improvement and has better shader support but it isn't worth even one "much".

No you don't have to argue the facts, nor do you have to get the facts right.
