Besides running on a GPU 10 years more modern with much more advanced features, Mario is also running on 3GB of RAM, so putting it on PS3/360 would mean you'd have to squeeze it down into 1/6th the amount of memory; a drop to 600p alone won't do that.

its more work but can be done, there methods to get around the ram problem, it of course more time consuming but mario isn't anywhere as complex as GTAV, or anywhere as big, GTAV of course also has way more going on, and more detailed.
