I own a PS4 and a Switch, as well as all of the Souls games. Huge fan of the series. This is a tough one for me, though.
I already own Dark Souls on both PS3 and PC, and my PC version is modded to run in 60 FPS with 1080p. Buying the Switch version would probably be a down-grade for me. On the other hand, the Switch is my favorite console right now, and playing with the pro controller would be nice.
I will most likely buy the PC version when it comes out, but there's a possibility that I may get the Switch version as well at some point, depending on how well it's received.
