Best Collection of Boss Fights?

I recently started playing Peace Walker, and it got me thinking about Metal Gear Solid 3 -- which for me has the best collection of boss fights in any game, ever.

But I wanted to survey the community here, and find out which individual title you guys and gals think has the best set of boss fights in gaming -- any why.
