If you really like Demon's Souls, then you definitely have to play Dark Souls.  The gameplay for Dark Souls is almost the same as Demon's Souls, but I really had more of a sense of adventure in Dark Souls.  It feels like you are making your way through a rich and detailed fantasy/horror world.  The things you encounter in Dark Souls are more interesting in general.

And you are right that Demon's Souls and Dark Souls are not exactly roguelikes, but I feel like it appeals to the same type of person who likes roguelikes.  Dark Souls feels like a very forgiving roguelike to me.
