I would love to have an ICO remake as well. I played it again on the ps3 and while it looks gorgeous, the original low res backgrounds stood out like a sore thumb. I had hoped the game would actually render the rest of the castle in the background to give you a much greater sense of immersion by being able to exactly see where you came from and where you're going like in TLG. ICO with TLG's engine would be great!
Or put it in VR and feel the connection with the characters, age and scale of the castle through that :)
