Square Enix said they are working with Epic and Nintendo on possibly porting FFXV through the unreal engine basing the assets on the console version.
Kingdom Hearts III is not too demanding that a downgrade can't fix it (most of its hardware pushing features are visual.)
Monster Hunter World is not too demanding, the game isn't really technically impressive (although aesthetically it is pretty.) The difficulty of getting to work on Switch is about equal to the difficulty of getting the original Monster Hunter on PSP from PS2.
Modern game engines are designed to be scalable with hardware performance. There are very few games that can't be downgraded if they are developed using Unreal Engine. In the case of Monster Hunter, MT Framework is already working on the Switch.
