Eh, that's why we make jokes about our physical appearance. I'd much rather make a racist joke to a friend I know has fun with it, than make a joke about their beliefs, because that's when you're taking it into "values" territory and mocking them for something they have consciously chosen to believe in. 

Beliefs can be changed though, while race cannot. So, being racist is criticizing someone for something they cannot control.
