In 2009, i changed my PC screen from 720p to a 1080p. I remember, I played Batman AA / The Witcher 1, and the change was damn impressive. Once I got 1080p, I never came back. Playing ps3 games in 720p was hurting my eyes (Bayonetta, Darksiders)

Then I got a bigger screen, then a projector. 1080p with 100" screen @ 60fps is now my setup for playing since 2013.

Last week I bought a brand new laptop with a GTX1060, a 15" 4k screen.

I'm playing Batman AA now on my 4k screen and it's like I'm playing another game. Hollow night, Nex Machina, and Xmorph: Defense are damn awesome in 4K.

I don't know when I'll be able to afford a 4k projector, but this is defo gonna be my next purchase...

No wonder you massively notice the difference, an 100'' projector at 1080p has a very low pixel per inch density, four times lower than the first Game Boy screen in fact. On the other hand a 15'' 4K screen is probably close to the resolution limit your eye can perceive. Size and distance are the key here, indeed a 15'' screen on 1080p will look sharper than a 100'' 4K screen. I would get that 4K projector next same as you, in your position, the benefit is going to be huge.
