I think that might be the issue, actually. Considering how Souls are developed, they cater for a specific kind of skill; to demand a lower difficulty would require an entire rebalance of the whole game, not just altering the damage input of enemies / resistance of the main character, which in essence makes it not worth the effort of the developer.
Either you get to the point the developer expects you to under learning skills and own knowledge or you don't pass that area; anything below that isn't expected to beat the area in the first place, which the game doesn't cater for. It's a limit for some people, but then again Demon's / Dark Souls isn't a game for everyone, but the people able to tackle such challenge.
