It would have to be a team with a very small body of work, as the giants of the industry have turned in a turkey now and then. Even Nintendo, by far the best developer out there, is capable of mediocrity.

I'd say I trust Team Ico (or what's left of it), Retro Studios, and...I think that's it. Maybe DrinkBox?
