I'd probably just go with the screen protector and a cheaper SD card since data wise, you're not gonna see 20-40 GB games since most Nintendo games are compressed relatively well and most third parties won't have to utilize that much space anyway. Plus physical games are a thing as well. As for a pro controller, it's an option you can get if you really don't care for the joy cons being used separately. The power bank? I don't have much experience with them but it depends on how much you'll play undocked. As for the headset, again, it's up to you. Personally I don't care since I don't have many friends with a Switch to play online with and I've not been too fond of online chat (although that one time online experience with a friend on NBA 2K on the 360 was pretty good).
