Dragonstone is a stronghold in itself, though not fertile and without any resources to take advantage of. At the beginning of Season 4, Stannis' family had nothing left to eat. That's why no one bothers taking a castle that can't sustain by itself because of the poor resources. And it was only a strategic stronghold to take if you were coming from the East, or else it isn't strategical from a Westerosi standpoint.
