Well ... I wouldn't say "fake" or anything like that but, as I understand it, a lot of early game-play videos are mock-ups where the developers are making guesses about the level of detail they can reach. That means unexpected changes or additions might result in the dreaded "downgrade" label from the internet. I've heard some developers dislike them for that reason.
Personally, I don't obsess over the details at this stage. I judge when it actually releases.
