They put expiry date also on aged cheese when it's packaged, because laws require it, but although when a cheese isn't anymore whole, but sliced or cut in pieces, it won't be able to age further for years, Parmigiano Reggiano and aged Pecorino are still better as old as they can still age, and Gorgonzola, Roquefort, Brie and Camembert are always better towards their expiry date or even a few days or even weeks after. Obviously only if correctly stored.
Stale bread, if not moldy, can still be eaten, and some recipes expressly require it.
Although with preserved fish it's better to avoid any risk, some say that good quality canned tuna in olive oil is tastier when close to its expiry date.
