Let's be honest it's far ahead of previous MH titles which are ps2 era games technically. on the Pro you'll be looking at dynamic 4k vs 240p. Much better online integration, seamless world better graphics. It's just leaps and bounds ahead.
Now obviously it won't be at the level of the creme de La creme such as Horizon or anthem which you mentioned. It's got a hell of a lot smaller budget and it would be financial suicide to try and build a world as good looking as them.
