Maybe start off with simple things like locking him in a dark room for weeks at a time, only time he sees light is when he gets beaten. Then perform human experimentation to better our medicine, we won't kill him though, that's the easy way out. Then destroy whatever he loves most, and then keep him on the brink of starvation and dehydration, just the brink, he needs to live. When he begs for death, thats when you know youve broken them.
