But those stories are now considered non-canon anyways.  ALL Disney-published entertainment moving forward (games included) has to be canon so reinterpreting this story to now rest comfortably in canon can still happen.

That goes for the whole series. The continuation of the kotor storyline is as canon as the kotor storyline. 

 

A reboot wouldn't be kotor 3, it would be a do-over of the whole thing. Wich is fine.
