Gravity is still technically a theory, we know it exists as we see and feel it's actions, it just scientists don't fully understand it yet.

Bacteria developed a new way to process energy due to spontanious change/mutation. Proof that evolution exists in controlled environments. Obviously we can't witness such a change in most obvious species due to time scale.
