You do have to remember, the system markets itself.
The games (Mario Kart) are fun enough that people who play split screen once may be tempted to buy despite the price.
Don't forget that many people buy a new phone almost yearly, and the Switch is cheaper than a new flagship phone (I have seen casuals justify the purchase this way for the price of $470 AUD).
