It makes sense to use the Vita as a template considering the CPU archtecture. Since it is a launch game, I have a feeling they wanted to get it done quickly, and could've done better if they had more time.

Difference between the Switch and the Playstation 3 doesn't seem to be as big.

Still. It is expected that ports won't allow for the Switch's hardware to shine, but it does give us a baseline in expected image quality even at this early stage.
