There seem to be different daytimes, shaders or lighting engines. And maybe also different seasons. Or the colors got upgraded, most likely on both versions but the Wii-U footage is older.
In the first part I prefer the Wii-U version, it has far better shadows and atmosphere but it might be just recorded at a different in-game daytime. Or the weather engine uses random elements. Also at 0:35 the Switch version seems to miss some cloud effects. Also the Wii-U version shows some flowers in front of the stone which are missing in the Switch version.
But again, the Wii-U footage might be just outdated and the retail version will look different.
