Because it breaks the immersion for me. I am a male and have no desire to identify as a female in anything, including gaming. I have tried other good games with female leads, but never complete them because I lose interest due to lack of immersion. It is personal preference, and denying that is a major reason why SJW sound so damn retarded.
In their mind, if you do not see things their way you are a bigot/sexist/religious extremist. I do not see it this way. I will not give my money to Horizon or TLoU2 because I know I will not enjoy the game because of their design choice, but I do not fault them for it. Nor do I fault a female gamer who would pass on Uncharted but play every Tomb Raider game ever to be released.
That is the difference.

You are right, they do not seem to cater to SJW, however that does not solve my issue. My issue is that I cannot immerse myself in a game where I portray a female. As I said above, tried it many times and it always bores me.
It is all personal preference my friend. I do not bash the devs for portrayal of their vision for a game. However they will not get my money either as I will not spend it on something I know I will not like, regardless of what the general population thinks of the games.
