Every artistic medium (movies, music, games) goes through stages.
1. Dawn - Filled with bold experimentation because there are no rules.
2. Prime - "Golden Age" where product is fine tuned through lessons.
3. Saturation - Industry becomes risk averse in investments, sticks with what is proven
Should keep in mind that by stage three markets segment with "indies" or "underground" scenes where experimentation still thrives. Also, these are generalizations and obviously exceptions exist. Bloodborne is one of my favorite games of past decade and it was big hyped release. If enough people demand something different from current popular norm the market will follow.
