Don't be afraid, from Final Fantasy VIII, gets my vote. It's just so intense, and vibrant. It always gets you in the mood for a fight:

Runner-up would be Lost Odyssey's. It feels like a boss theme altogether, at times, but it's great enough so that it doesn't ever become boring. And it's just memorable in its entirety:
