F-Zero. Mario Kart is 50% luck and 50% skill. You can't win just by being good, you have to be lucky and that's why I pick F-Zero because racing should be about skill imo.
GT is probably the best "sim" racer though... but I don't have nearly as much fun with sims as I do arcade racers.
