I wonder if the game will benefit from the S model. Maybe the resolution sticks around 900p more often than not? Either way I got the Xbox One S for FFXV so I'm looking forward to it.

The benefit should be there, albeit fairly small.

What is dynamic resolution? Will the reso change while playing? I think thats annoiyng when the graphics quality changes all the time.

Correct.
It's actually a fantastic technology for consoles as they don't have the hardware capability that PC's have to maintain solid framerates with all the graphics dialed up to 11.

Ironically... I also can't stand it. I tried to eliminate it in Halo 5 by limiting my resolution to 720P... However the game always renders at the same resolution and then is scaled after that. lol

The Neo is said to take advantage of dynamic features such as dynamic resolution. The engine will dynamically change it to reach the target framerate as much as possible, but with Neo, and most likely Project Scorpio, the engine will run smoother and dynamically adjusting the resolution won't be required because the hardware won't be taxed in the way the regular consoles are. So we should expect solid 1080p@30fps on those upgraded consoles.
When it comes to the XBO S though, that thing isn't even on par with the original PS4, so I don't think people shoud expect much of a difference with the regular XBO.
