Witcher 3 easy
It just did so many things right. It was the first open world game I played where I felt the world was real. The first game that I felt the beastiary was actually something more than just a pointless bestiary. First time side quests kept me as riveted if not more riveted than the actual main storyline. DLC back to how it should be or full on huge expansions. Vast and interesting cast. Choices feel real. You find yourself agonizing over what to pick for story/emotional reasons versus what gives me best reward.
