You can use third party apps to use it without the Adapter. I assume the adapter is needed so you can use all the Controllers functions such as the Wireless Audio (which isn't available on third party apps.)

I mean if Microsoft make you get a wireless adapter for their controller on their own operating system I assume there must be some technological reason as to why it is required.

Well with the new x1 controllers, you can pair them up with bluetooth and you don't need an adapter unless you want to have more than one controller. Not that I ever thought MS requiring an adapter was a good idea in the first place since to me, it makes zero sense apart from $$$. 

And the issue with third party apps is that they aren't exactly perfect or as stable as official ones would be.

Edit: Also Bluetooth can do wireless audio
