For your requirements I'd say.. 2TB as a base. Game installs and DLC's take up a lot of data nowadays and you'll fill up a 500GB in no time.
Also, forget about SSD's and hybrid HDD's.. they don't make much of a difference to overall performance (and loading times) to justify the cost. Well, unless you have some money to burn, that is.
