The secret is low heat, mixing eggs with a fork, and continuing to stir like a risotto. 

Do you use shredded cheese and milk in your scrambled eggs?  I don't even drink milk anymore but that was one trick I picked up from my mom was adding a little milk to the mix.

Another cool way to do it is with milk cream and a bit of butter! Salt and pepper and a bit of parsley on top.
