All I need now is projectiles or a way to put a weapon on sackboys hands (to recreate some old school favorites) and finally give me a way to control the physics somewhat (less gravity, more gravity, etc...)
I don't know about small handheld weapons, but it should be pretty easy to create something like a cannon that you push around or mount on a tank. All it would take is a piston mechanism or a spring combined with a notched wheel (look at some toys for design inspirations). What you can do with those weapons is another question... I don't know whether or not it's possible to "kill" enemies, but at the very least you should be able to knock them over/into a pit.
