It's hard to gauge on what Nintendo fans really want because not everyone's on forums and other social media outlets. Plus there's always some people who enjoy games that others don't.

All I know is that...I got one of the characters I voted for in the Smash Ballot!

In the end, I think Nintendo has made attempts to listen and understand. Does it always work? Hard to tell. I mean, Super Paper Mario, for example, had a story that fans, according to Club Nintendo feedback, apparently were not interested in so you didn't see much emphasis on story. There are lots of games that fans are positively receptive of that don't do well sales wise and they do affect how companies think about potential future installments. Plus, if they really had to listen to people in forums or sometimes on social media, then I probably wouldn't have seen Metroid Prime, Wii, DS, or Wind Waker because not everyone was receptive of these ideas (heck there was backlash for Wind Waker's initial reveal as it didn't match with the teaser demo of realistic Link vs Ganondorf).
