If they already made an HD compilaton of older titles, why are they doing another one now? Did they remaster those again, or they just included new ones?

Since 2.5, which was KH2, BSB and (videos of) Coded, they released Dream Drop Distance, so they are HDing that, made a film and an extra game for this (the Aqua part).

I just want KH3. Maybe get Billy Zane back to voice Ansem. Get him to say Darkness 15 times in a row. Think waiting 6 years for new entry in the FF series is waiting a long time for SquEnix? Well they've avoided making KH3 since 2006.
