How about thinking he's a man because in Latin based languages it is grammatically correct to use "he" when the gender of someone or something is unknown. (Hence also why it's grammatically correct to call a group of guys and girls just guys.)
Therefore it's not so much an assumption of manhood as it is a gramatical fact that some take as an assumption.
Well that or the fact that it's just a lot better to be a man then it is a woman in this world.
