I have read them all at least twice, including Good Omens. The light fantastic is not a good place to start, not only is it a direct sequel (the only one), but it is a sequel to the worst book in the series, and a terrible book itself. Interesting Times is pretty good, but it is kind of a sequel to the Light Fantastic, and you may miss some of the humour.

I usually recommend beginning from Mort, which really is quite a good book. Terry Pratchett is one of the few authors, however, where each book is pretty much always better than the previous one, so picking up a late book might be a good idea (but in some cases, could spoil some of the previous ones)
