Why Monster Hunter for the Wii? I can imagine a lot of reasons, but it would be best to ask Capcom, which still continues to support the other consoles as well.
For one MH3 may not be up to spec to compete with other PS3 games currently under development and would thus be more suitable for the Wii and maybe PS2 (which could be under development, the PS2 has a huge install base for Japan and is proven to have a fanbase for the game). Secondly it could be Nintendo paid for this. In any case it will be easier to create a HD version with bells and whistles of a PS2/Wii targeted game for the PS3/360 than it would be to cut down the game back to lower end hardware (For instance you could design the game to have too much going on at once, with lower specced hardware struggling too much to keep up, the same goes for a potential Wii Dragon Quest game).
With regard to "FF, MGS, DMC or RE5" I agree it works into the advantage of the PS3, a lot of effort was made to make them run well on the PS3. So the developed game engine assets would go to waste if future games would not use these already established assets.
