with the parry you are behind the enemy and deal extra dmg - btw timing a square hit right in the parry will make it include a slash to the back after which you can follow up with multiple square hits and regain the Ki afterwards with R1 to finish the probably now Ki-less (if not dead) enemy with a triangle grapple
and the just-in-time L1 block seems more risky to me, because usually I'm a bit late with parries if I miss which results in me blocking the enemy's first strike anyway and parrying his second strike if he does an immidiate follow up

I disagree with that. DeS/DaS certainly have lower expectations, you just need good patience and that usually is enough to beat those games, while in Ni-Oh just blocking/evading and occasionally slashing won't get you all that far, the game expects you learn the intricacies of it's fighting system.
