The problem is unlike Nintendo, Sony and Microsoft are not game developers at heart, they are tech-companies and they do what their best at, producing impressive tech: beefy hardware for photorealistic games. It is no surprise therefore that Sony (and maybe Microsoft) come with updated consoles as they are used to it from their other markets: PC's, Notebooks, Tablets, Smartphones, TV's, etc.

Nintendo on the other hand makes games which are fun, which put a smile on your face. To achieve that, they don't need state of the art hardware. Nevertheless, Nintendo has learned unparalleled programming skills in making out the most of underpowered hardeware. Although, I think the NX will be beefy too but this is due to the change of the market. Today, the console market is dominated by Northamerica and Europe, Japan is left with a small market share and the Western gamers demand photorealistic graphics.
