Point me to another console game where I can explore full scale, procedurally generated planets with their own ecosystems and am able to fly between planets and solar systems in real time. Throw in space battles and the gorgeous, unique  artstyle and I don't see how this game isn't original. 

Diversity in the type of AAA games  we recieve is of serious need. We'll get 12 different online Sci-FI FPS's  in one year and not even one Sci Fi game with emphasis on wanderlust and exploration. Its tragic.

So to answer your question, an aweful lot in terms of the AAA game scene.

The execution is more or less being done on a level that is considered safe, especially with the main focus being the goal to reach the center of the universe to uncover some mysterious secret, just like a journey to some hidden location to find some mystical artifact or person.

You say "console game" to lay down a very ultra specific rule but from what I've seen a game like Starbound already has executed what NMS is setting out to do, of course you could easily argue that the game is 2D and not 3D but the execution and plans are near enough the same for the most part (Starbound has procedurally generated planets, creatures, trading with colonies and different alien species for some examples), the art style I would easily say is highly subjective, what you consider "gorgeous" won't always be to another and what they consider beautiful will definitely not always be the same for you, that's something to always remember.

Tbh we've been lacking in diversity with AAA games for a very long time, especially within the space exploration sim genre, which was why a few years back that fans of the space sim genre went crazy to support Chris Roberts Star Citizen game because the genre was sorely lacking and was dormant for years, now a few years later we're finally starting to see a few more space focused games and sims for that area, what that means is that you have to just create something that people have been wanting for years and you'll see people clamoring for it, that's not to say it doesn't have to be entirely original either.
